I think it’s worth noting that chain resaaurtnts and local ownership are NOT necessarily mutually exclusive. Many are franchises which are purchased by relatively small LOCAL business owners, rather than owned by mega-corporations. This is certainly true of the ubiquitous Dunkin Donuts & Subways-type sandwich shops. But it’s also true of resaaurtnts like Au Bon Pain and Bruegger’s Bagels, among others. Many use local, healthy, fresh foods, certainly produce, if only because it’s cheaper than trucking in food supplies from further away. The concept behind chain resaaurtnts is that they offer relative predictability, regardless of location, and that’s attractive to many people. There are crummy chain resaaurtnts, just as there are plenty of unhealthy or downright awful, so-called independent resaaurtnts.
