Certes, il y a des adresses réputées pour leurs étoiles, mais il faut aller chercher la cuisine florentine dans ce qu'elle a de plus simple : cette fameuse cuccina povera faite de soupes de haricots, de bistecca alla fiorentina, de salades dépouillées. La noblesse de la ville s'y cache, encore faut-il la dénicher dans des adresses comme Cibrèo, démultipliée en caffé, trattoria et théâtre, où l'on a su garder cette rusticité désarmante. Autre adresse indiscutable, la cantine Sostanza où, à l'heure du déjeuner, les vrais Florentins viennent découper la chianina et plonger la cuiller dans de solides soupes.

    Remarquez-vous leur vaisselle si lourde et si épaisse. Dans la moindre trattoria, la nappe blanche. Ca change tout, non?
